Individual Cheesecakes

Ingredients:
Cheesecakes:
6 Oreo sandwich cookies
2-8 oz. pkgs cream cheese, softened
½ c. sugar
2 eggs, room temperature
1 T. all-purpose flour
1 t. vanilla
Blueberry Topping
12 oz. fresh blueberries
¼ c. sugar
1 t. lemon juice
¼ c water
1 T. cornstarch
Directions:
Preheat oven to 350 degrees Fahrenheit. Line a cupcake pan with liners. Separate the Oreo cookies and scrape off the cream filling. Place a half cookie in the bottom of cupcake wrapper.
In a mixer, combine the softened cream cheese and sugar and mix for 2 minutes. Add the flour and the eggs. Add the vanilla. Scoop into the cupcake liners, on top of the cookie, about 2/3 full. Bake for 15-18 minutes until the middle of the cheesecakes are set but not cracking. Allow to cool completely.
Topping: Rinse your berries and combine all the ingredients in a saucepan. Cook over medium-high heat until berries begin to burst, the sauce thickens, and it becomes opaque. Remove from heat once it reaches a boil and allow to cool completely. Scoop small teaspoon of the sauce onto the top of the cooled cheesecakes.
You can change this up by using other fruits, like strawberries, cherries, raspberries, or top with caramel or chocolate.
