Pumpkin Chocolate Chip Cookies

Every fall, as the leaves are turning and the weather cools, we pull out all things pumpkin. Pumpkin cake, pumpkin muffins, pumpkin pancakes, and pumpkin cookies! The warm spices and the comforting pumpkin combined with the soft texture will make you feel all the fall vibes. These cookies are sure to become a family favorite.


1 1/2 c. shortening

1 1/2 c. sugar

1 egg

1 c. pumpkin puree

1 c. chocolate chips

2 1/2 c. flour

1 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

3/4 tsp ground nutmeg (optional)


Preheat oven to 375 degrees Fahrenheit. In separate bowl sift flour, baking powder, baking soda, salt, and spices. Set aside. In mixer cream shortening and sugar. Add egg and pumpkin. Add dry ingredients a little at a time, scraping down sides of mixing bowl a couple times. Stir in chocolate chips. Scoop batter onto baking sheets lined with parchment paper or baking mats. Bake for 10 minutes. Remove and cool for 3 minutes and remove to cooling rack


***Note this dough an be refrigerated and used later. It can also be doubled easily. Cookies can be frozen once cooked but do not freeze the raw dough.
