Swig Sugar Cookies



5 ½ c. + 2 T. flour

1 t. salt

½ t. baking soda

½ t. cream of tarter

1 c. butter, softened

¾ c. canola oil

1 ¼ c. sugar

¾ c. powdered sugar

2 T. water

2 eggs, room temperature

1 t. vanilla


In a mixing bowl, mix together flour, salt, baking soda and cream of tarter. Set aside. In a separate bowl, cream butter and sugars together for 2 minutes. Slowly stream in the oil while beating. Add the water and vanilla. Then beat in the eggs, one at a time, until combined. Add the flour mixture to the wet ingredients a little at a time, mixing until combined. Preheat oven to 350 degrees F. Roll dough into 2-inch balls. Place ¼ c. sugar with a pinch of salt in a bowl. Press dough down with the bottom of a glass dipped in the sugar mixture. Press to ½ inch thick. Bake for 8 minutes only. Remove from oven and cool on cooling rack. Frost with your favorite frosting.
