Pomegranate and Citrus Salad


Looking for a fresh and light addition to your holiday table? Look no further. This salad combines the freshness of citrus with the tart of pomegranate and a touch of sweet. The perfect way to cleanse a plate or simply lighten the meal.



2 pomegranates, seeded

4 red grapefruit

4 pink grapefruit

2 white grapefruit

6 oranges

1 pomelo

½ c. sugar

1 c. fresh mint leaves


Section* all the citrus fruit and add to the pomegranate seeds in a large bowl. In a food processor add sugar and mint leaves. Pulse until the mint is very fine and sprinkle over fruit. Stir and refrigerate for 2-4 hours. Serve chilled.


Any combination of citrus fruit will work for this salad and in the summer when pomegranates are harder to find, raspberries work great as a substitute.


*To section citrus fruit, cut off top and bottom and cut off the peel around each edge, taking away all the white pith. With a sharp knife, cut each section away from the membrane on each side.
